Meat Loaf for Two

I don’t know about you, but I am not one for reheating more than once.  If it’s not finished by the second meal, it’s dogfood or garbage.  So, here is my recipe for meatloaf.  If you want no leftovers, invite a friend.  Sometimes, Doug eats more.  It makes a really good cold meatloaf sandwich.

1 lb ground round or sirloin; 1 egg, beaten;  1 cup chopped cheddar cheese; 1/4 cup onion, chopped fine; 1 tbs. parsley; 1 tsp. each of thyme and rosemary;  1/2 tsp. sea salt; 1 clove garlic, chopped fine; 1/4 cup salsa; 1 tbs. salsa verde; 1/4 cup bread crumbs.

In a medium bowl, beat an egg.  Add the rest of the ingredients and mix thoroughly.  Form into a loaf pan and cover top with catsup if you like it.  Bake for one hour at 400 degrees.  Slice and serve.

I usually make it up early in the day and put it in the refrigerator. 

Roasted little red potatoes are good with it.  They take about the same amount of time.  I cut them into wedges and toss them with a little extra virgin olive oil and plenty of garlic, rosemary and thyme.  Cover them, but take the cover off for the last ten minutes.  If cooking them alone, turn up the oven to 450 and cook for about 40 minutes.  Check the potatoes for doneness.  Is that a word?

Ocean City

I had an IRA that matured.  I had gotten it at a little bank in Reisterstown.  As happens, it was bought by a bigger bank.  The closest branch was in Ocean City so we rode down there today.  I said I had to take some pictures while we were here.  It was a perfect day.  It was sunny and in the upper 70s.  Since it was out of season, there was no parking problem.  We just pulled up to the end of a side street and walked down.

New Header

I’m not sure whether I like this one.  It seems too busy to me.  Maybe I’ll change it to this. 

Now that the weather is getting a little cooler, we sometimes have mornings like this.  I like the fog.  Everything seems different.  When I was young, we used to go camping in Maine.  I liked to walk along the rocks and watch the waves.  I would pretend that I was the only person on the island.  I’d like to go again sometime, maybe with Nancy.  Doug doesn’t like to travel.  It’s hard enough dragging him to the ocean in Delaware.

Einstein Coat

I started pulling the coat apart last night while trying to find something to watch on TV.  There is never anything on Saturdays any more.  I don’t watch reality shows, game shows or sports.  Most comedies are so bad that I find myself grinding my teeth in under ten minutes.  Most dramas might as well be fantasy for all the sense they make and I usually figure out who did it by the second commercial.  Often, I pretend that the comedy is a drama and the drama is a comedy.  It’s much more believable that way.

Here, I have starting unraveling.  I didn’t get any done toady because Maude took a very long nap.

She was out until midnight last night.  She got up at 6 this morning and went out.  It was almost noon before she had breakfast.  She slept right through the boys’ supper.  We finally woke her up and pushed her out the door around 6PM without any supper.  If we had fed her, she probably would have stayed out until 2AM.

It was a nice afternoon so I worked on my sock. 

I normally use six needles at this point.  There is a lost less stress on the needles and there is no gap going down the bottom of the sock.

I Couldn’t Get the Kinks Out

It was one of those days.  No matter hard I tried, I couldn’t get the kinks out.  I finally gave up and sat down and sewed all afternoon.  At least I got something done.  I had picked up a pizza at the market yesterday, so. it was ten minutes in the oven and supper was ready.  I got some knitting done.  It was very humid today.  Did that have something to do with it?

I got my Stitches stuff in the mail.  I have been thinking about leaving here early on Thursday.  I could stop downtown, pick up my badge at the registration desk, and attend the Market.  It’ll be open from 5PM  to 8PM for attendees.  That way, I wouldn’t be tempted to shop at lunch.  I could go outside, maybe down to the harbor, and get some air and exercise.

Still Not Normal

I’ve been back four days and I still feel like I am playing catch up.  Am I getting too old for all this running around?  I haven’t cooked a decent meal.  There’s too much going on every day.  I’ve got these nice chicken breasts in my refrigerator that I really want to do something creative with and broccoli that isn’t getting any younger.  I rode by my favorite produce stand and they are closed for the winter.  When did that happen?  I feel like I missed my bus stop and now I am lost in a time warp.  Tomorrow is Monday.  I am going to pay bills, fill out forms, and make phone calls.  Maybe then, I will get on the right track again.

Doug has been his usual helpful self.  Some days I got easily beat him to death.

DelMarVa Geese

They may look like Canada geese, but they have never been to Canada.  Many generations ago, their ancestors came and never went back.  They fly  around in V formation in any direction and they honk their fool heads off.  But do they go anywhere?  In winter, their cousins come for a visit.  They all argue about the best place to live.  Then they poop all over your yard and kill your grass.  And you have to make sure your idiot dog doesn’t eat any of it, especially if he has a tender stomach.  It’s really hard to get out of the carpet.

Almost finished.  I’ll be glad.

Flu Shots

I have never had a flu shot.  I have never had the flu.  Why should I get a flu shot?  My doctor tells me I should get a flu shot.  My crazy ex-girlfriend’s husband used to bring the shots home (he’s a pediatrician) and try to give me one, too.  I can’t get myself to get one.  I am not afraid of needles.  I need a really good reason to get one.  No one has come up with that reason yet.  I guess I don’t want to tempt fate.

I’m glad I did it.  I feel so much better today. 

I finally tackled the weedy mess on the other side of the garage.  I am getting some Iris and Daffodil bulbs from Kevin in the fall and I want to put the Iris there.  I found an old mostly dead rose bush so I cut it way back.  We’ll see on that.  I like roses, but not the thorns.  There are also two ugly, prickly, little bushes that I think I will dig up. 

I didn’t get much knitting done and I didn’t take a picture.
